Healthful Camp Cuisine

Camping for many people is all about relaxing in the fresh open air far from home and many evening hours around the glowing fire.  With the Labor Day weekend approaching many people are reserving campsite, planning backpacking trips and preparing their equipment lists. However, before you head out, someone needs to take charge and plan the menu for the camping trip long before you arrive, pitch a tent or even start a camp fire.  If you are that brave person planning the camp menu read on!  Here is a helpful and healthful three day camp meal menu plan to help you get started as well as some tips.

Day 1
  • Hearty Hot Cakes - Whole-wheat pancakes smeared with peanut butter and served with fresh fruit
  • Pocket Sandwiches - Pita pockets filled with lean meat, tomato, avocado, and feta cheese
  • Pot of Good - Warm up pre-cooked turkey and white bean chili.  Serve with a wheat roll.

Day 2
  • Apple Sweet Oats - Cook oatmeal in apple juice. Add diced apple, cinnamon and nutmeg.
  • No-fry Fish on Rye - Mix a can or pouch of tuna with mayo, diced celery, onion and red pepper.  Spread on rye bread.
  • Camp Kebabs - Thread pre-cooked cubes of chicken breast and cut-up veggies on skewers.  Brush the kebabs with a little olive oil.  Sprinkle with dried herbs.  Grill or heat over the fire until cooked.

Day 3
  • PB Toast - Spread peanut butter on pan-roasted whole-wheat bread.  Top with diced dried fruit.
  • Chickpea salad - Stir together canned garbanzo beans, french-style green beans, and artichoke hearts. Cover in Italian salad dressing to taste.
  • Pepper Packs - Stuff green bell peppers with a mix of diced veggies, cooked brown rice, beans and spices.  Add a little cooked lean meat, if desired.  Wrap each pepper in foil.  Heat on the grill or over the fire.
Don't forget snacks - In addition to planned meals, you'll want to take some healthy snacks along too.  A few good options:
  • Baked tortilla chips and salsa
  • Whole-wheat crackers and hummus
  • Baby carrots and dip
  • Trail-Mix
  • GORP
  • Sun-flower Seeds
